Wine Making
We believe excellent wine starts at the vineyard. We have half a dozen varietals carefully sourced from Europe's famous growing regions, such as Tuscany Italy, Rhône France, and Rioja Spain. Each varietal uses multiple clones from successful appellation for greater complexity.
We are committed to creating exquisite wines that showcase our level of passion and handcrafted, artisanal quality. All of our wines go through malolactic fermentation and are stored in oak barrels for 18 months before bottling. We handle all of our wine making locally at Old Town Temecula.
Our Terroir
Located just 30 miles from the coastline of the Pacific Ocean, our vineyard is tucked away in the heart of Temecula AVA in Southern California. Our vineyard enjoys a unique microclimate setting that is conducive to growing the finest grape varietals, with a position 1600 feet above sea level, surrounded by the stunning beauty of coastal mountain ranges. Our composted granitic soil also has great drainage which encourages optimal root growth.

Syrah
Our Syrah is a medium to high-bodied wine with dark fruit, smoky flavors, and a distinct tobacco taste. The soft tannins within the wine combine perfectly with the dark fruit flavors of blueberry, plum, and black currant. We use American oaks from Wisconsin and Appalachia during the aging process of our Syrah, which leads to notes of spice, nutmeg, caramel, and vanilla flavors.
Cabernet Sauvignon
Our Cabernet Sauvignon exhibits deep red color and aromas of plum, black cherry, menthol, licorice and chocolate. This special wine enters the palate with thick, supple weight, leading into broad flavors of dark red fruit, slight earthiness, and warm toffee spice. Our Cabernet varietals are aged in French oak sourced from Troncais Forest, which deepens the intensity of the wine with notes of clove, almond and white chocolate flavors.
